Green's Fairy Cupcakes
  Overview





Little girls will love these yummy vanilla flavoured cupcakes with pink icing and edible fairy glitter. They are perfect for birthday parties or afterschool treats. They are also a great fun way to get your kids involved in the kitchen. Green's Fairy cupcakes contain no artificial colours or flavours.



 
  Make-up Directions
To make Fairy cupcakes you will need
1 egg
2 tablespoons (40mL) water
2 1/2 tablespoons polyunsaturated vegetable oil (50mL)
One 12 cup patty tin (a muffin pan may also be used)

Plus for icing.....
1 teaspoon (5g) polyunsaturated margarine
2 teaspoons (10ml) water

1. Preheat oven to 180C/350F (160C fan forced). Insert twelve cupcake cases into patty or muffin tray.
2. Place cake mix, egg, water and oil into a mixing bowl. Using an electric mixer, mix on low speed until ingredients are combined. Mix on medium speed for 2 minutes, scraping down the sides of the bowl occasionally. Divide batter evenly between the 12 cupcake cases (Approx. 1 level tablespoon of batter per cupcake).
3. Bake for 15-18 minutes or until firm to touch. Carefully remove cupcakes from oven and place onto a cooling wire. Allow to cool for approximately 45 minutes prior to icing.

To prepare icing:
Empty contents of icing sachet into a small mixing bowl with polyunsaturated margarine and water. Mix with a wooden spoon until smooth. Spread icing over the centre of each cold cupcake using a teaspoon. Immediately after icing, sprinkle the edible glitter sachet evenly over the to of the 12 cupcakes.
Makes 12 cupcakes
